Hope you’re doing well.
So I cooked prime rib for the very first time this year and it was a success, yay! I didn’t ruin Christmas dinner! Cooking anything for the very first time is an unknown outcome. Until you do it…and sometimes do it quite a few times before you get it right.
Now to the food unknown, dishes from my sweet mom…dishes so complex, that even I haven’t tried to make them. (Yet)
Vietnamese salad (mom)
There are many different salads, yes really, Vietnamese food isn’t just pho, banh mi, noodle, rice, egg rolls or spring rolls. This mixed salad is my family’s favorite by Chef Mom, of course. 😍
Glass noodle, jellyfish, thin pieces of pork, shrimp, lots of shredded vegetables and more. It looks like an easy and quick dish to make but when you eat it, you will taste the complexity of all the ingredients, perfectly paired and delicately chopped, sliced and shredded. So good!
In other word – SNAIL. 😳😱 But not the ones you see crawling around, please do NOT cook or eat those, we buy ours at the grocery store. 🐌🐚French influenced and inspired, so escargot sounds fancier, right? 😉😁
Chef Mom mixed the escargot with a little ginger, vermicelli, shiitake mushroom into small little balls, then wrapped it up in foil for steaming. The magic is the ginger dipping sauce. By itself, it’s still yummy but the dipping sauce is the key!
